So I've been staking INFO and just over half of the mining transactions are "generated but not accepted". Is this normal? Is there something I should be doing differently to have a better success rate?

When staking, you are actually generating blocks that also need to be accepted by the rest of the network.
If the network accepts your block, you are rewarded with your stake amount
If the network doesnt accept your block, then your coins for that stake are returned.

As the race to accept the block finally comes down to which client can get theirs in first. If someone gets in before you and theirs gets accepted, your block will become conflicted.

All’s not lost however, the coinage is maintained for those coins, and will be used to calculate your next reward

To have the best chance of succeeding in staking you should have:

a reliable network connection,
a good number of connections to other peers
The other thing to note is, the overall network difficulty, Info coin has been randomly hammered by 200 - 500+ additional hash at random times in a effort to get the chain stuck.

You're lucky to get "only" 50% generated but not accepted, my wallet has only generated accepted six times in a month now.
